I would like to share with you one of my favourite dishes, macaroni and cheese! This recipe is so delicious that even when you are super full you will dive in for another serving. With the right amount of cream, crunch of the bread crumbs and the juice of the tomatoes, this will definitely leave you salivating for more. This is a quick recipe that really doesn't take too much time to prepare. I've listed certain amounts for the seasonings, but really season to taste, if you like a little more spice go ahead and add more cayenne chili powder.
Macaroni and Cheese
serves 4 ppl

Ingredients:
60 ml margarine
60 ml flour
4 ml salt
400 ml milk
300 ml grated cheese
300 ml macaroni
30 ml breadcrumbs
20 ml melted butter
1/2 diced tomato
season to taste with 1/2 tsp parsley, 1/2 salt and 1/2 pepper
a pinch of powdered cayenne chili
1/2 tsp garlic powder
Instructions:
- Set oven to 375 degrees F. Grease a small casserole dish
- Fill saucepan 1/2 full of water. Add a few grains of salt. Bring water to a boil
- Add the macaroni to the boiling water. Stir so the macaroni doesn't stick together. Do not cover. Bring to a boil again. Cook until macaroni is al dente (soft but still keeps its shape)
- Drain the macaroni. Do not rinse.
- Melt the 20 ml of margarine in a custard cup in the microwave for 30 seconds. Add the crumbs and mix. Set aside.
- Dice 1/2 tomato, set aside.
- In a saucepan, on very low heat, add the 60 ml of margarine. When margarine is melted, add the flour and 2 ml of salt and stir for 1 min.
- Gradually add the milk using a whisk to mix.
- Cook on medium heat. Whisk constantly until the mixture thickens and forms a sauce.
- Remove from the heat and add the grated cheese. Stir until the cheese is melted. Add the seasonings: parsley, salt and pepper, cayenne powder and garlic powder.
- Add the macaroni to the cheese sauce. Stir until the macaroni is coated with the sauce. Pour mixture into the prepared casserole dish and top with buttered crumbs.
- Bake for about 15 mins, add the diced tomatoes, spread them on top, and bake another 5 mins or until the cheese sauce is bubbly and the crumbs are light golden brown. Serve and Enjoy!
