So remember how I used some Mexican style veggie ground to make veggie tacos? In this recipe my mom used some original veggie ground (not the Mexican style one), added some Indian spices to it and turned it into a Indian Food Recipe. Not only is this delicious but it's also very healthy! I love this veggie ground stuff, it's so versatile. It can be used to make all sorts of cuisine, from Mexican to Indian! Who said vegetarian food has to be boring? So here is the recipe to what I call "Veggie Ground Sabzi":
In a small food processor add some garlic and ginger enough so it will yield about 1 tbsp
Once the garlic and ginger start to brown add the sliced onion
Add spices and potatoes, mix well
Add the veggie ground, mix well
Add about 2 cups of water or until it looks like a photo below:
Cook until potatoes are tender and most of the water is absorbed - about 15 mins
Take off the stove and garnish with some cilantro, serve with some roti or naan. Enjoy!
