Blueberry Oatmeal Breakfast Cake

It's summer time and that means that my favourite berry is in season - blueberries.  Growing up in the lower mainland - Vancouver , British Columbia, blueberries elicit particular memories. Long before I knew how healthy blueberries are for you, I fell in love with blueberries when I was a little child. My grandparents would bring back blueberries after a long day of working on the blue berry farms here in the lower mainland. 


As an adult I was excited to learn that consuming as much blueberries as I do (I end up snacking on them like a bowl of chips, or throw them into any recipe that I think would benefit from some blueberries) that they are great for your health! They are full of antioxidants, low in calories and high in vitamin C, A and E. And they are great for your brain and skin!

Thus I have come to be grateful for living in a province where blueberries grow in abundance and summers as a child always included a trip or two to a local BC Blueberries Farm where you can pick your own blueberries. It's a great fun activity you can do with your children in the summer, if you do live in BC definitely check out the BC blueberries local u-pick farm. It is also a great way to support our community and local farmers.  Buying local has become a priority for me over the last few years, not only are you building a sense of community and connection but you are also supporting your local family farms economically. 

In the summer we have blueberries almost everyday, whether in smoothies, on our waffles as blueberry compote or just a bowl full of blueberries to munch on while working or watching tv. We also freeze up a few batches for us to utilize in the winter!




As you can imagine, we have a treasure chest full of blueberry recipes, but I wanted to share a simple and healthy recipe that you can try out and incorporate! 

We have been making this Blueberry Oatmeal Breakfast Cake for quite a while in my family. It is something that can be made quickly and with sweet and healthy BC blueberries in our fridge it's a matter of mixing a few ingredients and voila - you have a healthy breakfast, or snack with your cup of tea. This cake lasts barely a day in our household - give it a try and let us know what you think!

 
RECIPE:

BLUEBERRY OATMEAL BREAKFAST CAKE (
8 servings)




1 1/3 cups (325ml) all purpose flour
3/4 cups (180ml) quick-cooking oats
1/3 cups (75ml) sugar
2 teaspoons (10ml) baking powder
3/4 cup (175ml) milk
1/4 cup (60ml) vegetable oil
1 egg

  1. Preheat over to 400F
  2. Grease an 8-inch round baking pan, set aside
  3. In a medium mixing bowl combine flour, oats, sugar, baking powder and salt
  4. In a 1 cup-measure, stir milk, oil and egg
  5. pour all at once into flour mixture
  6. Stir just until moistened (batter will be lumpy)
  7. fold in blueberries
  8. spoon batter into prepared pan
  9. bake until cake is golden - about 20-25 mins
  10. cool on rack for about 10mins
  11. serve warm!

  3. I love eating berries in the summer too! I just went berry picking over the weekend and still have some blueberries leftover, so I'd love to give this recipe a try. Thanks for sharing!
