easy to bake sour cream blueberry cake







Growing up Indian there would always be a network of communication between my mom and my aunts and so on and so forth where one of the many topics of interest included recipes and cooking. One of the recipes that my aunt came up with and became famous for was this blueberry cake. My aunt, was our favourite for a number of reasons but she always took the cake (pun intended) due to her amazing baking abilities and the amount of baked goods she would prepare when we would stay over and send home with us. I have many fond moments associated with this blueberry cake. The day that my uncle got married, the day my youngest cousin was born, the day I was leaving to move across the pond to begin my Masters at Oxford and many others, are all associated with this cake. But there are other, more intimate memories associated with this cake that aren't necessarily large life markers but give me a sense of home and family of all of us being together.

My aunt is always trying to find ways to incorporate health into the food that she makes and bakes. So she is always excited to serve up this cake as blueberries are full of antioxidants, low in calories, and high in vitamins C, A and E, and dietary fibre. And after my father had his major heart surgery, blueberries have become a staple summer fruit in our parent's home as well. Not to mention, blueberries remind me of my grandparents who picked berried when they first immigrated to Canada and used to bring buckets of blueberries back home for the extended family to split.

So, that is why I take pride in visiting a local u-pick farm or buying BC blueberries at my local grocery store. Blueberries are always easy to work with as in you can make a pancake sauce, jam, oatmeal cake, scones, muffins or even this cake out of them--or--if you're anything like me, you love to munch on blueberries throughout the day as a healthy alternative to *ahem* chips *ahem* If you want more blueberry inspiration, checkout the BC Blueberry Instagram.

This easy to bake sour cream blueberry cake is the perfect quick dessert or a side for your cup of tea. give it a try!

Ingredients:


Crust
1 1/2 cup flour
1/2 cup sugar
1 1/2 tsp baking powder
1/2 cup butter
1 tsp vanilla
1 egg


Filling
3 cups BC Blueberries
1 egg
2 cups sour cream
1/2 cup sugar
1 tsp vanilla 


Instructions
1. Mix all the crust ingredients together and press the ingredients into a springform pan
2. In a separate container mix all the filling ingredients and then pour evenly on top of crust in          
    springform pan
3. Bake for 45 mins to 1 hour at 350F (take out when brown)
4. Let it sit for about 20 minutes and refrigerate when you're not eating
